NEW! A Taste of VACE Culinary Arts Academy

VACE is delighted to introduce the new Culinary Arts Academy. Taught by local professional chefs in the fully equipped Ventura High School Culinary Arts Department kitchens (not the cafeteria; Rooms 83 and 84 classrooms back up to Main Street), these classes are ideal for home cooks No experience is necessary.

Fee: $75 per session. Save $30! The $195 Package includes your choice of three classes over a three-month period as well as a chef’s jacket or an apron.

Culinary – Kitchen Basics: Series of Three Sessions

The first three-hour session presents an introduction to knife skills, soup, and whole chicken cutting. The second three-hour session includes an introduction to blanching, sweating, sautéing, braising, and pan sauces. The third three-hour session offers an introduction to poaching, steaming, alternative grains and vegetables Limited space.

Culinary – Baking, Canning, and More!

In these three-hour sessions, learn to bake, to can, and to perform other culinary tasks. Topics change each month and may include making pies, sweet and savory tarts, muffins, quick breads, artisan yeast breads, and pound cakes. These sessions may also include making cream puffs, éclairs, ganache, and pastry cream. Other sessions teach the skills required for canning both preserves and sauces. Limited space.

Revit Architecture 2014 Basics

Basic Introduction to the World of Computing–This course is for novice computer users taking their first computer classes. Students learn basic tasks using Windows, typing with word processor software, navigating the Web, and working with email.
Internet Explorer–Learn to move comfortably around the Internet by using all the features of the browser software on your computer.
Microsoft Windows–Beginning with an overview of computer hardware and software, the course also demonstrates running application programs, moving and sizing program windows, saving and printing. Windows online Help and file maintenance are also covered.
Microsoft Office, A Basic Introduction–An easy, fun way to learn the basics of word processing, spreadsheet, database and presentation techniques with hands-on projects that fit your daily life.
Microsoft Access, Beginning through Intermediate–The skills learned in this course include modifying and building tables, viewing and organizing information, using Access tools, building and modifying forms, planning and designing databases, producing reports and integrating with other applications.
Microsoft Excel, Beginning through Advanced–Learn to work with spreadsheets and workbooks, create formulas, use charts and other objects to enhance a spreadsheet, integrate data with other applications, and much more.
Microsoft Word, Beginning through Advanced–Begin by learning basic techniques for working with documents, paragraphs, pictures and charts. Progress to learning advanced features such as macros and creating forms, creating tables, using mail merge and collaborating with workgroups.

Graphic Communications, Internet Publishing, and Marketing Video Production Classes

Adobe Photoshop Basics

Learn to edit and manipulate computer graphic images for output to print, video, and the internet. This course will instruct students on the creation of images, the use of special effects and filters, and the basic animation of graphic images and video. Students will also learn importing and exporting files and programs, evaluating compatibility issues, and creating images using digital cameras, digital video and scanners. Basic computer operations will NOT be covered.

DIY Marketing Video

In this 10-week, workshop-style class, students will learn how to create their own business profile video for their marketing efforts using their own iPhone, iPad or digital camera. Topics will include scripting your video, identifying your audience, as well as proper lighting, composition, and audio techniques, shooting your video, and then editing for YouTube, social media or your website. Students will have the opportunity to work together to create their own video by the end of the 10-week session.

Medical Office

Prepare for an exciting career in the medical industry. A wide range of class offerings that open windows of opportunity for people who want to move into medical office work or upgrade their skills. Length of course depends on content and degree of difficulty. The following courses are available:

Medical Assistant Skills Workshop

This is competency-based course for trained medical assistants and personnel interested in brushing up and enhancing their clinical skills. Proof of successful completion of a medical back office program or a transcript of previous training is required in order to enroll. Experience should be within the past five years. The course includes review of vital signs, EKGs, venipunctures, injections, patient and exam room preparation, basic lab tests, autoclaving, CPR and first aid. Students will be given time to practice practical skills on each other. Classroom copies of the textbook will be available for students who do not wish to purchase a book. All students must wear scrubs.

Cost: $300 (includes lab fees and CPR card). Book extra (Medical Assisting: Administrative and Clinical Competencies, 6th Ed.); will be used as a reference.
